The Champagne district of northern France is flooded with vineyards producing the three varieties crucial to producing this famous sparkling - Chardonnay, Pinot Noir and Pinot Meunier. Here Chardonnay gives the wine freshness and elegance; Pinot Noir the body, while Pinot Meunier provides the fruit and suppleness.

It is with great sadness that the term sparkling wine implies inferiority to many, Yes, the wines of Champagne are unique and special, but from outside, whether it be France, Spain, Australia, New Zealand or England, there are some extraordinary examples made using exactly the same vinification process which often give greater variation and are more adaptable than Champagne itself. Without the restrictions on grape varieties or blend specifications, these wines can range from the superbly elegant Nyetimber from England to the fresh tropical flavours of Chauvet from Quartz Reef, New Zealand.
